Do you mean change the CC email adress ?
by default, it's there : 
Organisation > Defaults > Itineraries and bookings > Supplier booking emails
Configure your preferred settings for booking emails to be sent to your suppliers

Semantic Chameleon, Hi Elan, no I mean it would be helpful to have the ability to cc in another email address for the times when you want the email to go to several people, not just one. As that would be specific only for certain suppliers, we wouldn't want the default cc email settings changed.
