Do you mean change the CC email adress ?
by default, it's there : 
Organisation > Defaults > Itineraries and bookings > Supplier booking emails
Configure your preferred settings for booking emails to be sent to your suppliers

Semantic Chameleon, no I mean we want the ability to add a manual cc email address so that the email goes to two people. The default cc address is our email address, so we receive a copy of every email that goes out of Tourwriter. That needs to stay the same.
