Calculate sales tax to display in itinerary invoices

I need to show the value % or $ of Sales tax an itinerary has.

I need to calculate this as:

a percentage of the cost of the items I am selling
a percentage of the commission I am making

So how can we see the 16% tax added on to the itinerary? On the Payments page of the itin, it's still just the total price without tax. Ex: $431 versus $431 + 16% = $499.96.
